Roller coaster brew
Like the pheonix rising from the ashes, brew # 4 is bubbling again.
On Tuesday morning I wrote how my homemade wort had finally started bubbling the airlock. Sadly, it was short-lived and stopped that evening. I was devastated.
But then it restarted again yesterday (Thursday) afternoon and I'm delighted to say that, 24 hours later, it's still going! YAY!
The only thing I can think of that may have caused this is temperature variation. I pitched the yeast at ~22C. The ambient temp in the brewery is more like 17.5C, so the reduction in temperature put the yeast back to sleep.
On Wednesday, we had a sunny day and the temp rose again to ~18.5C, and I think that's been enough to kick-start the yeast back to life.
Let's hope this hasn't negatively affected the taste.
